The Ultimate Pancake Recipe

This recipe saved Saturday mornings of lockdown 2 for me. It gets me up and ready for the day in 5 easy steps. Makes 3 big fluffy pancakes!

DRY INGREDIENTS
1 cup of plain flour
1 tablespoon of caster sugar
1 teaspoon of baking powder
Pinch of salt
WET INGREDIENTS
1 egg
1/4 cup of milk
1 tablespoon of melted butter
FOR THE PAN
Teaspoon of Oil/ Butter for the pan

STEP ONE

Mix all the dry ingredients in one bowl. In a separate bowl, beat the egg then whisk in the milk and melted butter.

STEP TWO

Pour the wet ingredients into the dry ingredients and stir well until all lumps are gone. If it is too thick, add more milk.

STEP THREE

Heat up your pan, medium heat, with the oil/butter. When heated, ladle about 3/4 cup of the batter onto the hot pan.

STEP FOUR

Cook the pancake until bubbles break the surface and the bottom is golden. This will take around 3 minutes. Then flip with a spatula and cook for approximately one more minute on the other side.

STEP FIVE

The most enjoyable step… decorate that pancake! Put your favourite toppings on, whether it be chocolate, fruit, bacon, syrup or anything else you desire! You have full creative freedom here. I like to make my breakfasts colourful, to start my day off on the right foot.
