If you’re anything like me, you’ll love a sweet treat. Sometimes you just need a bit of comfort food to see you through the day and this is my golden recipe to do just that.
Ingredients: (makes 6 Brownies)
300g Soft brown sugar, I used dark but light is also fine
3 Creme Eggs
150g Plain flour (all purpose)
Step One: Pop your creme eggs in the freezer to cool them down before cooking. I did this around an hour/ two hours before putting them in the oven.
Step Two: After you have frozen the Creme eggs for a couple of hours, you’re ready to start with your mixture! Preheat your oven to 180C/ Gas Mark 4.
Step Three: Melt your butter. You can either do this in a small saucepan over a low heat or pop it in the microwave. I opted for a 90 second stint in the microwave, don’t allow it to get to a point of bubbling.
Step Four: Grease and line a brownie pan with butter. For lining the pan, I often use a strip of greaseproof paper to cover one side of the pan, horizontally, and then use another layer to do it the opposite way, vertically, before greasing.
Step Five: Add your cocoa and plain flour to a large bowl, mix thoroughly.
Step Six: Crack two eggs into a bowl and whisk lightly. Add the sugar to this mixture and whisk again until all the ingredients are combined.
Step Seven: Once the ingredients are mixed, add the melted butter. Ensure that it is completely folded throughout.
Step Eight: Pour the wet mixture into the bowl of flour/cocoa. Gently stir together until the mixture is completely combined. This will take a bit of time and a lot of elbow power!
Step Nine: Into the prepared tray, spread the brownie batter. Make sure that is spread evenly to all corners and that the top is smooth. Take the Creme eggs out of the freezer and chop into halves. Pop these around your mixture, making sure that they are evenly spaced out.
Step Ten: Pop the brownies into the oven for around 20-25 minutes. Don’t worry if they’re a little squidgy on the inside mix… that’s how you want them! Cut the brownies into six so that everyone gets a creme egg half! Most importantly, enjoy!
