Gluten Free Chocolate Brownies

Christmas has arrived, passed and now I’m spending most of my free time baking sweet treats! Brownies are a favourite of mine to make but I had never made a gluten free recipe until a family member asked if I could try it out. There’s not an insane amount of modification between GF brownies and regular ones, just the flour and chocolate so this wasn’t that difficult at all and these taste just as amazing!

  • 240g unsalted butter
  • 30 ml (2 x tsp) vegetable oil
  • 260g caster sugar
  • 200g light brown sugar
  • 4 large eggs
  • 3/4 tsp salt
  • 1 tbsp vanilla extract
  • 130g all purpose gluten free flower
  • 100g dark cocoa powder
  • 200g Galaxy chocolate (or any other GF chocolate of your choice)
  • (Optional) additional chocolate chips

Step One:

Ingredients:

Preheat your oven to 175 degrees celcius and melt your butter. Leave the butter aside to cool for a moment while you gather all your ingredients up.

Step Two:

Line your brownie tray with baking parchment. If you don’t have any parchment line the tray with butter instead, then set this aside.

Step Three:

In a large mixing bowl combine your melted butter, oil and both sugars. Whisk this all together for a minute or two! It’s not the most aesthetically pleasing bowl at this point but trust the process.

Step Four:

Add your eggs and vanilla extract and whisk again! Make sure the egg yolks have split and everything is combined.

Step Five:

Sift in your flour, cocoa powder and salt and using a wooden spoon fold this in. This takes a few moments – as your fold you should start to see air bubbles appear in the mixture.

Step Six:

Chop up your Galaxy bar (or the chocolate of your choice) into smaller pieces and fold this into the mixture.

Step Seven:

Place the mixture into your brownie tray. Make sure the mixture is evenly spread out. (Optional: sprinkle some your chocolate chips over the top)

Step Eight:

Now baking time will depend entirely on how you like your brownies. I personally prefer my brownies a little more fudgy so I bake them between 25 – 30 mins. You can leave in for an extra 5 – 10 mins if you want for a more sturdy brownie.

Step Nine:

Remove the brownies from the oven and wait for them to cool.

Step Ten:

Slice up the brownies into whatever size you wish and serve! Then enjoy your gluten free brownie!!
