It’s not a secret, us students love a takeaway! We all have our favourite fancies and I’m no different. I LOVE Chinese cuisine, it is just an absolute taste sensation. However.. the student budget doesn’t allow for ordering out all of the time. This called for me to start making fake-aways at home and honestly, this is where it’s at! In 10 easy steps, please join me with the festivities of this tasty goodness.

“The perfect fake-away recipe”
Ingredients:
(for the marinating)
- 3 Chicken Breasts
- 1 tsp salt
- 1 tsp pepper
- 1 tsp chilli flakes
- 1 tsp paprika
- 1 tsp cajun
- 1 tsp garlic powder
- 2 eggs
- 10 tbsp plain flour
- 3 tbsp cornflour (cornstarch)
- Pinch of water
(for the sauce)
- 1 tbsp sesame oil
- 2 cloves of garlic (Peeled and minced) or equivalent of garlic powder
- 2 tbsp honey
- 3 tbsp ketchup
- 2 tbsp brown sugar
- 4 tbsp dark soy sauce
(to serve)
- Sesame seeds
- Spring onions
- Boiled rice
Method
Step 1:
Dice your chicken breasts into small/medium sized chunks and pop into a glass bowl. Clean any surfaces that have touched the chicken thoroughly, the last thing you want is food poisoning!
Step 2:
Add the ingredients to the chicken to marinate (Salt, pepper, chilli flakes, paprika, cajun, garlic powder). Add the flour/ cornflour a bit at a time. Between these times, add your wet ingredients (Eggs and Water).
Step 3:
Using a rubber spoon, fold the ingredients around the bowl. Ensure that all bits of the chicken are coated in the marinade.
Step 4:
Leave that to marinate whilst you prepare your sauce.
Step 5:
In a separate bowl, add your next set of ingredients and mix together. (Sesame Oil, garlic, honey, ketchup, brown sugar, soy sauce.)
Step 6:
Grab a wok. If you don’t have one available, a large saucepan will be fine. Add vegetable oil to the pan (enough to deep fry your chicken.) Cook the oil on a high-heat in preparation for frying.
Step 7:
When the oil begins to bubble, add a few chunks of marinated chicken. Make sure they are separated, you don’t want one big piece!
Step 8:
Once they are golden brown, remove them from the pan and pop them onto a kitchen-roll covered tray. Repeat this step until you have used all of your chicken.
Step 9:
Start boiling your rice and in a separate large frying pan, start heating your sauce. When the sauce starts to bubble, add your chicken and mix until it is fully-coated.
Step 10:
Plate up your meal! Add sesame seeds and chopped spring onions for that satisfying look. Go ahead and enjoy your meal!!!
